Killer Carrot Cake

Ingredients

4 eggs

1 1/4 cups vegetable oil

2 cups white sugar

2 teaspoons vanilla extract

2 cups flour

2 teaspoons baking soda

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons ground cinnamon

3 cups grated carrots

Oven Settings

350º

You will also need

A grater that won’t cut off your fingers

Willpower

A mixer

A greased 9×13″ pan

Directions

1. First, preheat the oven…then go to town and grate those carrots!

2. Keep grating!

3. YOU CAN DO IT!

4. Ok, now that your arms are dead and you have 3 cups worth of grated carrots you can move on. In a large bowl combine the following in the mixer; eggs, oil, sugar, vanilla.

5. Sift flour and mix into your concoction. Add baking soda, baking powder, salt, and cinamon. Slowly add carrots. Mix well then pour into your greased pan.

6. Bake at 350º for 40-50 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes.

Optional - you can add some frosting if you want. Vanilla works well but don’t kill yourself too much. The cake is already deadly enough as it is with the amount of oil used!

What is it : Think of bread…now think of making tea like you make fresh bread. Kombucha is tea that has been ‘cultured’ by little yeast organisms and fermented over a period of time to become sweet. It’s a beverage said to have amazing medicinal purposes like green tea but no studies have proven this as a fact…whatever, it still tastes good and it doesn’t take a scientist or lab study to know that there’s some healthy junk in there. Because it is fermented, yes, naturally it’s got a bit of alcohol in there but not enough to get a DWI.

Ingredients & Safety : The fun thing about Kombucha is that you can use ANY tea or flavor you want! It’s fun to experiment with different teas, but typically black or green tea is used. Other than the actual tea, the most important thing in creating kombucha is the cultured bacteria known as the mother. You can easily buy a mother kombachu mushroom at a store or online, or you can try to make one yourself at home! But please BE CAREFUL – if you can not identify mold from your cultured bacteria then just buy it from someone who knows what they’re doing! Cross contamination is incredibly dangerous and if your experiment starts growing some strange black fungi or something extra, throw everything away immediately.

…And the results are delicious!

If you find the idea of drinking this to be somewhat disgusting and you live a very sheltered life where you don’t know how anything is made, consider this; More than likely you’ve eaten bread before but do you know how most bread is made? Similarly to kombucha, bread is baked cultured yeast – at least the good stuff is. Many bread factories still have the original ‘mother dough’ and use that culture to create the same types of bread…for example, Tomar’s favorite, Sour Dough! And if that’s not convincing enough, eggs come out of chicken butts and vegetables grow in poop.

Hot Milk Cake

Ingredients

2 eggs

1 cup sugar

1 cup flour

1/2 teaspoon baking powder

1 tablespoon butter

1/2 cup warm milk

Oven Settings

350º

Directions

1. Beat eggs until light and thick. Slowly add sugar and mix well.

2. Sift flour and fold into mixture along with baking powder.

3. Warm the butter and milk together so the butter melts completely. Combine into the mixture and stir well.

4. Grease whatever pan you plan to use and bake at 350º for 30 minutes.

Q. What the heck is the cook-off?

A. Just to clue you all in, my neighbor, Mandy, and I have started a nice cooking contest to see who can cook the best “insert dish here” or get creative with a single ingredient. It’s really nice getting everyone together in one place and sharing what we’ve made. Sometimes we can’t make it every week but we try! We don’t play for prizes, just bragging rights.

So anyways, my plan of attack was this new sandwich I’ve been getting addicted to…I don’t have any name for it but my roommate got me hooked on baby spinach leaves. I just dump those in all my sandwiches now but the one I made tonight was a combination of avocado, baby spinach leaves, shaved turkey breast,  spicy mayo, four cheese mix, between two pieces of freshly baked and sliced challah bread. Having it on challah was something pretty new for me…but I took the risk.

I was blown out of the water with Mandy’s panini – sliced turkey, procuitto, pesto, mozzerella, and roasted bell pepper grilled between mini ciabatta bread slices. It was absolutely amazing and even I admitted that this greasy delight was a much better sandwich even though they were both very different. It tasted a lot like pizza, oddly. I guess it was the cheese and spices. Hands down, Mandy won this round.

Ingredients

6 russet potatoes (peeled and cut into 3rds)

1/2 cup milk

3 tablespoon butter

3/4 teaspoon salt

1 teaspoon paprika

dash of minced parsley

Pepper to taste

You will also need

A mixer

Directions

1. Boil potato pieces until soft (about 20-25 minutes) and drain well.

2. Throw ‘em in the mixer! Be careful and make sure they’re soft enough to go in! Add milk slowly until smooth and the consistency you want it (depending on the size of your potatoes you might need to add a little more milk). Add butter, salt, pepper, paprika, and parsley. Mix about 2 minutes until light and fluffy.

So anyways, back to Skrags. Her mange looks to be completely gone – her fur has magically transformed from this balding, matty, coarse mess into healthy, fuzzy, soft fur! With a beautiful pattern too…she looks a lot like the little girl kitty she had. Her bald spots are growing in. Since I got her fixed she’s been acting much differently than before…in a very positive way! She seems to have a lot more energy and when I go on my nightly walks she tags along with me.

It’s really cute. She’s a good cat.

I never thought I would actually call Skraggles ‘cute‘ before now.

The sad thing is that after she was fixed they somehow figured out her age (I have no idea how they can do that) and told me that she was somewhere between 1 – 2 years of age.

Damn.

This cat has been through hell and back in such a short amount of time. The good thing is that now she’s got a whole life of freedom ahead of her…And if we ever move from this area I’m taking her with us to live in whatever neighborhood we end up in.
